Been so long since I've done it, maybe someone else can remember here. But if you open the sunroof just a tad (maybe 1/2" of movement), the inner panel can then be pushed back by hand. This way, you can repair the cloth. Use 3m spray adhesive sold in any automotive store.
As for getting to the sunroof cassette, look at my headliner DIY in my sig.
As for a sunroof "delete"? Good luck, you'll probably need sheet metal, a welder and everything else to make the outside look alright. Not to mention the inside... I don't know if you can get a headliner without a sunroof hole in it. I haven't seen it.

I've put some foam rubber to knock out the rattles and just took out the fuse. It doesn't bother me anymore. I cut out a plastic frame to take up the place of the sunroof cloth. Looks ghetto but i don't drive by staring at the roof of my car. My dad's able to weld on a new sheet of metal and do the bodyworks involved but i'd figure this is a cheaper option.
