Anytime you work on the vehicles electrical system you should disconnect the battery. This helps to prevent injury and damage to yourself and the car.
Have you gotten a copy of the E30 Bentley Service Manual yet?

If i unplugged the old one before i disconnected the old one and then plunged it back up do you think that the computer will reset it self when i install the new one. i also started the car after i plugged it back up

You should leave the battery disconnected for at least an hour to allow the computer to reset itself. With a new MAF the notice in engine performance should be immediately noticeable
