The only time I've had that happen is when it was when all the humid air got inside the car. Basically, in my experience, it's just condensation forming from really cold a/c. Other than that it's just getting moisture in the system somehow.

Since it still blows cold air and the vapor only shows in rainy conditions I don't believe it is anything critical. However if you have time to kill I'd go ahead and track down the problem.
