It's probably the level sensor itself is corroded/lose connection/or dis-conected causing the light to trigger. It's common on your model -PROVIDING the temp gauge is below the half mark and there's no steam coming out of your exhaust. (white smoke) The sensor might have just come unplugged and that too would trigger the red check engine light. When was the last coolant flush performed? They're supposed to be done every other year or 30k whichever comes first. Have your trusted mechanic look at the sensor.
